The coolant temperature does seem high - but I can't recall the coolant temperature ever spiking on my van during trips over the rockies. Needle stays up at 190 and doesn't move much at all.
High coolant temp could be a sign of a radiator fan failing (or the fan resistors under the bumper). Turning on the AC while driving, should be putting both radiator fans on -- and increasing the airflow through the radiator (and bring temps down).
